I have been thinking about interior upgrades down the road. When it comes to seats, which would be easier? Getting new seats entirely and if aftermarket brands would be better or just higher quality Honda/Acura seats. Or getting new leather put on the old seat frames?

I'd say either upgrade to oem leather, do Catskins, or oem seats out of a rsx or something equlivlant. That's my opinion.
